Corn and Black Bean Summer Salad

Ingredients
  • 3 ears white corn, kernels cut off
  • 1 red bell pepper, diced
  • 1 15- oz can black beans, rinsed and drained
  • 1/4 cup minced red onion
  • 1/4 cup minced cilantro
  • Juice of 1 lime
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions
  1. Place everything in a large bowl and toss to combine. Enjoy!
